Lately I have become aware of Potassium mentioned in many posts, blogs etc.
I am wondering what potassium does for our body? Both negative and positive?
How much should we have?
What are the signs of potassium deficiency? and....
.......any thing else that you can tell me about potassium?

Potassium, along with sodium, is essential in the body for transmitting signals along nerves. It also balances out your sodium levels, for example if you've had a very sodium-heavy day, eating a lot of potassium can prevent the huge water retention that the sodium would cause. I've heard you should have at least twice as much potassium as sodium to do this efficiently but I'm not sure of exact numbers.
