Ground Chicken Chili Recipe?

Does anyone have a low calorie recipe for Chicken chili using ground chicken?

I dont' have a recipe per se- but I would think that any chili recipe you have that you like and use ground beef in you could use and just use the ground chicken.
I make a "white" chicken chili w/chunk chicken. You could use the ground chicken in place. Just brown and drain. Mine is easy- quantities based on how much you want to make!
cooked chicken-shredded, cubed or browned/drained ground- about 1 lb or so
3 cans of beans that you like- rinsed and drained. I use white beans, black beans and light kidney
1 large(16-24 oz) jar of salsa- heat level to your tastes and amount to how thick/thin you want your chili
3 cans Fat free chicken gravy, or make your own chicken gravy w/fat free chicken stock thickened with flour or cornstarch
1/2 package frozen corn or 1 can corn drained
2-4 cloves garlic
one medium onion minced
cumin to taste(start with 2 -3 tsps)
salt and pepper to taste
fresh cilantro, about 3 tbsp chopped.
olive oil- about 2 tsp
in heavy dutch oven type pot heat olive oil. add onion and cook till a little translucent. Add garlic, and saute gently a few minutes more. Add cumin, and heat through till fragrant. add salsa, chicken beans, corn, gravy or chicken stock(thicken it all up later). heat through. taste- add salt and pepper to taste, more cumin if you like. Hot sauce or cayenne pepper to add heat if you want. simmer low and slow for at least 30 mins. This is good to transfer to a crock pot and keep on low for 2-3 hours then on warm till you serve it. before serving, add fresh cilantro and let heat through again. If you used chicken stock, you would want to thicken it up at this point.
this chili isn't really "white" anymore.. kind of a pink because of the salsa. You can keep it a "white" chili by omitting the salsa and just dicing up some fresh tomatoes and some green chilies and adding to the mix.

I'm making a turkey taco chili for dinner using ground turkey, I'm sure you could use chicken. I got the recipe from Skinnytaste.com. I've never tried it so I can't say anything about the taste. It sounds good though!

• 1.3 lbs 99% lean ground turkey
• 1 medium onion, chopped
• 1 bell pepper, chopped
• 10 oz can rotel tomatoes with green chilies
• 15 oz canned or frozen corn, drained
• 15 oz kidney beans, drained
• 8 oz tomato sauce
• 16 oz fat free refried beans
• 1 packet taco seasoning (you can use 40& less sodium)
• 2 1/2 cups fat free low sodium chicken broth
In a large pot, brown turkey on medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning and chicken broth. Bring to a boil and simmer about 10-15 minutes.
Serve with a few baked tortilla chips and your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.0 -

1 pound leanest ground turkey (97% fat free) or ground chicken breast
1 onion, chopped
2-3 cloves minced garlic (you can't use too much!)
1 1/2 cups celery (not too finely chopped - you can use more if you want)
1 15-ounce can tomato sauce
1 small can chopped green chilis (or jalapenos or chipotles depending on how hot you want it)
1 15-ounce can chopped or stewed tomatoes (I sometimes use two cans, or one can of regular, one can Rotel)
4 16-ounce cans of beans (mix n match: pinto, kidney, black, etc.)
1 package taco seasoning (3 tbsps if you have a container of it)
1 package Hidden Valley Ranch Salad Dressing Mix
2 teaspoons cumin (I always use more because I love cumin)
16-ounce bag of frozen corn or a can of corn
1. Brown turkey/chicken, adding onions, garlic and celery about halfway through.
2. Coat turkey w/ranch mix and taco seasoning.
3. Put that and the rest of the ingredients in the crockpot and cook till warm or on low all day. (You can also make it on the stovetop, and just be sure to let it simmer for a while. The longer it cooks, the better the flavor.)0
