Healthy "Alfredo" Sauce

This recipe tastes AMAZING, and a great option for making a healthier, lower-calorie version of pasta alfredo, using avocado in place of cream. The bonus? It only takes about 15 minutes to make!


Creamy Avocado Pasta:

1 box whole wheat pasta of choice
2 ripe avocados, pitted
1 lemon, juiced + lemon zest to garnish
2-4 garlic cloves, to taste
1 tsp kosher salt, or to taste
4 Tbsp extra virgin olive oil
Ground black pepper, to taste
*1 bunch herb of choice (basil, parsley, etc.) -- optional*
-- Makes 3-4 servings --


1. Boil water in a medium sized pot. Add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.

2. Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor. Process until smooth. Now add in the pitted avocado, *optional herbs*, and salt. Process until smooth and creamy.

3. When pasta is done cooking, drain and rinse in a strainer and place pasta into a large bowl. Pour on sauce and toss until fully combined. Garnish with lemon zest and black pepper. Serve immediately.

Note: Dish does not reheat well due to the avocado in the sauce.

    Haha my little brother is a really picky eater, and he's obsessed with alfredo recipes -- and he loves this! it has the same creamy texture as alfredo sauce, and since avocados don't have a strong taste of their own, it pairs really well with everything else in the recipe. It really does trick your tastebuds!
