Not eating quite enough calories

I'm set at eating 1200 a day. I usually get within 100 calories of that but have a hard time getting exactly or just over the 1200. How important is it to have at least 1200? How can I add a few extra without adding much more food?

handful of almonds or walnuts
Drizzle of olive oil
oz of cheese
fuller fat dairy instead of low/nonfat
add 1 oz to all your protein portions for the day
