stew. lentil soups. make in bulk, freeze in small zip lock bags0

Cannelloni or lasagne or similar? Soups. Pre-cut some veggies, maybe? Get in a lot of fruit, because it might be good for when you don't feel like much!0

Thanks to you both. I settled on making my favourite comfort foods, my mother's specialties:
Spaghetti and Meat Sauce
Tuna and cheese casserole
Chicken Soup
And, definitely NOT my mother's specialty, Chicken Enchilada Casserole.
However, I have no room in the freezer, so I will have to make it all through the week, as I get more room in the freezer!
