vegetarian college dining hall foods?

Can anyone help me think of some suggests for my dining hall?
They have a decent salad bar with a few awful salad dressings, bread and cereals, and ice cream. They always have one vegetarian soup and one meat soup. They also have calorific pizza and french fries. They have a pasta station which is vegetarian about half the time.
The actual vegetarian meals they serve for lunch and dinner though are always awful. Within the past year they changed it to vegan, so that eliminated a lot of their decent vegetarian food (veggie lasagna, cheese & bean burritos, quiche). Now they serve either plain white, brown, or yellow rice with either plain broccoli, green beans, or carrots. Sometimes they'll throw in a greasy as f*** veggie stir fry or tofu with more rice.
They used to have plain Silk soy milk, but now they have a dispenser with just vanilla and chocolate which end up just tasting like plastic.
I have fried liquid egg whites for breakfast every day along with toast with peanut butter. Finding protein for lunch and dinner is a struggle. I usually go with scrambled eggs (they don't have egg whites for lunch dinner, but they have regular eggs) and ice cream. I used to eat their veggie burgers which are a disgusting combination of rice, mushrooms (hate them), and american cheese which are cooked on the same grill as bacon, steak, burgers, hot dogs etc. Then the first week of school this year had black bean burgers which were fine, but they got rid of them. Apparently they were just a special. I can't bring myself to go back to their other nasty veggie burgers.
Anyway, can anyone suggest good, cheap, easy vegetarian/vegan food that a dining hall could serve? Can other students share what their dining halls serve? I'm looking for more protein, not salad...
