Hey Ladies & Gents,

So I am a vegetarian with a good few allergies (eggs & caffeine are the strongest)
Anyone out there got any nice recipies (other than soup or smoothies) for breakfast, lunches or dinners!!!
Maybe share them here??
Or is there a thread already for us veggies to use as a bible??

    On Saturdays I like to make a Tuscan Tofu Scramble...basically scallions, red bell pepper, 1/2 onion, garlic, firm tofu, a little seasoning blend (lately mrs dash herb something), spinach and a little soy sauce and it is grubbin. :)

    Veggie ideas:

    Breakfasts: tofu scramble, toast with vegan butter & honey, almond/soy milk & cereal, PB & banana, fruit salad, toast with jam, raw fruit/fresh fruit juice, water with lemon first thing in am.

    Lunch: veggie wraps, veggie burritos, soup & salad, veggie sushi, veggie stir fry/dumplings, veggie burger, hummus and veggie sticks, left overs from dinner - see below.

    Dinners: veggie lasagna, potato (with vegan butter or sour cream if you do dairy) with steamed veggies, veggie pizza with vegan cheese (daiya is really good), whole wheat pasta w/sauce and side salad, veggie burritos, soup & salad, veggie sushi, veggie stir fry/dumplings, veggie burger, pasta salad, baked kale & sweet potato fries...

    Hope that helps. Those are basically my staples :)

    Hey, me and my family never buy meat to cook. Sometimes we eat it out and sometimes we eat fish....

    So sort of part-time vegetarians really :)

    We usually have various veggies in tomato sauce with jacket potato or gluten free pasta

    we have hummus all the time with dipping veggies and fruit

    subbing for ideas :)

    I am a vegan and have intolerances. I use the PPK website for ideas - google it

    parsley soup.co.uk is also good but there is a lot of good websites like the food network or good food website for great veggie recipes. Just sit for an hour and research.

    I am typically a throw the veggies in a pot and add in spices to make something. :bigsmile:

    Just be sensible with your choices i.e butter, cheeses etc.

    If you add me (also vegetarian) then I have a few reciepes I cook. I use a lot of beans too. I make a chile but I don't like the false mince so I use kidney beans. I have been bookmarking some reciepes on here. Just browse the reciepe forum

    I was completely vegetarian for 10 years. Now I'm still mostly vegetarian, but I force myself to add a few meats into my diet for health reasons. I posted this thread a few days ago: http://www.myfitnesspal.com/topics/show/743935-tofu-parmigiana-recipe

    I thing you might really like this recipe. Instead of the egg sub to coat the tofu, try just a spritz of olive oil spray on each side before coating them in bread crumbs. Or even a tiny spread of vegan mayo on either side of either piece before breading them. Either will do to help the bread crumbs stick.
