potato leek soup

Okay I made this yesterday and did calculatae it for 8 servings...178 calories a cup
3 leeks washed and chopped
14 ounces of low fat, low sodium chicken broth
3 all purpose (cleaned and diced) potato
1 cup of 2% milk
1 tblsp olive oil
1 tsp of smart balance
1 tblsp black pepper
1 tsp of dill
pinch of salt

heat oil and margarine in large pot
add leeks and potato I just cooked them until the leeks got soft.
add the rest of the ingredients
cover and simmer for about 1/2 hour until potato are done.,
I then pureed some of it to make it thicker. It was great...
Enjoy...great on a cold winter day..

    thanks for this recipe. I made it and LOVED it. It was hard to put the leftovers into the tupperware, without taking an extra bite.:love:

    You got that right it ...Im on day 3 of it and still cant wait for lunch. I think Im gonna try the same recipe using cauliflower instead...Should work and calories shouldnt change either...

    Leeks are in the same family as onions and garlic. They kind of look like giant green onions, with a bulb at the bottom and green leaves. They're yummy!
