So i've been seeing a ton of posts on low calorie cupcakes that use a box of cake mix and a can of diet soda or pumpkin. I was thinking to myself "that's awesome, but i wish there was a cake mix that used stevia instead of sugar.."
So help me figure out how to make the lowest calorie cupcakes EVER! what's left in a box of cake mix besides sugar: flour, cocoa, vanilla, baking powder, ect. Let's make a list of alternatives and figure out how much of each item we could use to make a 'boxed cake mix' from scratch, that we would then only need to mix with one can of soda or pumpkin!
I've found that when substituting sugar with stevia, it's best to use half of what's recommended, otherwise it's too sweet and you get a funky aftertaste.
I also read somewhere that you can substitute flour with BLACK BEANS! if anyone has any experience with this, let's share.
i'm hoping we can make super awesome cupcakes that not only taste delicious, but are guilt free!

This is my favorite. I've even cut the milk and the shortening before but I prefer it this way. I also sometimes place the chocolate chips on top after they are baked to melt as a frosting
Ingredients
Flour, 1.5 cup (30g) - 600 Cals
Cocoa - Dry powder, unsweetened, 1 tbsp - 12 Cals
Egg Beaters, 1/2 cup (56g) - 60 Cals
Milk - Reduced fat, 2% milkfat, 0.5 cup - 61 Cals
Baking Powder - 1 Tbls - 24 Cals
Sugar Free Vanilla Syrup - 2 Tbls - 0 Cals (or vanilla and a 0cal sweetener)
Crisco - Baking Sicks Butter Flavor All-Vegetable Shortening, 1 tablespoon -110 Cals ( or use olive oil)
Semi-Sweet Chocolate Chips, 90 pcs - 210 Cals
I divide it into 18 muffins with 5 chips sprinkled into each muffin. Bake at 375 until done around 18 minutes. I use an advantium speed cook oven that uses halogen lights and microwaves so the traditional bake time my be a little off since it has been ages since I baked muffins in a traditional oven.
Then enjoy your 59.8 calorie muffins.0
