HOMEMADE GRANOLA BAR

I am allegic to everything that contains nuts. I want to make a homemade healthy granola bar with plenty of protein. Does anyone know of any recipes that might help?

    Here's a recipe we make here at home, it is nut and gluten free. Tastes amazing and is pretty healthy!

    CHEWY DATE AND SEED BARS

    Note: nut and gluten-free

    1 cup chopped dates
    1/2 cup water
    1 cup rolled oats
    1 cup hulled, roasted, unsalted pumpkin seeds
    1 cup hulled, roasted, unsalted sunflower seeds
    1/2 cup chopped dried apricots
    1/4 cup toasted sesame seeds
    3/4 packed dark brown sugar
    1/4 cup oat flour
    1/4 cup canola oil
    3/4 tsp salt

    Preheat oven to 350F

    Line 8-inch square pan with parchment paper

    Combine dates and water in small saucepan over medium-low heat. Bring to a simmer and simmer for 4 minutes or until dates are very soft and water has almost disappeared. drain. Reserve.

    Combine oats, pumpkin seeds, sunflower seeds, apricots, sesame seeds, coconut, brown sugar, oat flour, canola oil and salt in a bowl; toss to combine. stir in dates and mix thoroughly. Use spatula to firmly press mixture into prepared pan to make an even layer.

    Bake for 25 minutes or until top is evenly golden. Let cool completely.

    Use parchment to lift baked mixture out of pan and transfer to a cutting board. Use a serrated knife to cut into squares or bars.

    Keep in a sealed container until ready to eat.

    Makes 15 or more small bars.
