I want to make something for supper tonight with chicken breasts but I don't know what. I'm a really good cook so I can make something that's "difficult".
I'm just tired of making the same few dishes over and over and need some ideas.
Something with lots of veggies please!!!

I wouldn't say that there are a lot of veggies, though. I'm going to make Fiesta Lime Rice (same website) as a side and some kind of veggie side, just not sure yet. There are lot of good recipes on skinnytaste.com, so if this doesn't sound like your cup of tea, I'd suggest checking it out. I made the Santa Fe Chicken (crockpot) the other day and that was pretty good. It had black beans, corn, scallions, and tomatoes in it.0 -
Ponzu chicken served over steamed broccoli and mushrooms is my husband's absolute favorite!
We both love my seasoning rubs for chicken and do a slow roast in the oven for several hours... Always comes out moist and TONS of flavor.
I make compound butters ahead of time and will often rub down chicken with it, roast it in the oven and serve it with a lemon-herb vegetable mix of zucchini, summer squash, baby carrots and onions.
OHHHH and my person favorite and I never have anything left over...... Tequila-Lime marinated chicken for either salads or making quesadillas!!!
I prefer to use 1800 Reposado for the marinade, fresh zest and juice of 4-5 limes, fresh garlic, arbol chili powder, ancho chili powder, paprika, sea salt, little bit of olive oil. Marinate for several hours and then pop them on the grill or in a saute pan. Sliver up some peppers, onions, mushrooms... ohhhhhhhhhhhhhhhhhhhhhh this is so delish!!!!!0 -
Chicken & veggie saute:
2-3 chicken breasts, trimmed, & cut up into bite size pieces
1/2 cup of chicken broth( i use low sodium)
1/4 c. of lemon juice
1 small onion, cut up
1 head of broccoli, cut into bite size pieces
3 carrots, cut thinly
1/2 red, yelllow, orange, & green bell peppers, each
1 clove of garlic chopped well, or 1 tbsp. of minced garlic,
1 cup of either; zucchini or yellow squash, chopped thin.
1 tbsp of olive or grapeseed oil.
Heat oil in a saute pan until hot, add chicken, brown or until done. Add veggies & chicken broth, saute for 25 min. or until veggies are tender. Serve over rice, or couscous. can add pasley near the end, & i like to add chopped jalapenos, red pepper flakes, or 1 tbsp of curry to mine. Also salt & pepper to taste, i try not use salt, though, i use Mrs. dash, garlic & herb seasoning.0
