Vegetarian Recipes?

Hi so I've been looking for some good, low calorie, recipes for a vegetarian. Does anyone have any good ideas?

  • I love making vegetarian chili! I usually cut up one red bell pepper, one green pepper (or poblano), dice one onion, and then maybe dice up a jalepano or two if you enjoy spice. Cook those in a large pan with a little bit of Pam cooking spray. When they are almost done add in a bag of Bocca's Meatless Crumbles into the pan and cook that until they are slightly brown. After that I add a can of diced tomatoes, a small can of tomato sauce, a can of garbanzo beans, and then a can of another bean you enjoy (I like black beans or pinto beans). I also like to add a can of sliced olives, and sometimes even a can of corn. Spice to taste with Sriracha, chili pepper, whatever you like, and enjoy!

    I cook a lot, but I'm not always good about posting the recipes here. Friend me if you want to see my food diary though and I'd be happy to share if you see something intriguing. Personally I love the Veganomicon and Moosewood cookbooks and other than that I troll around online for recipes to make vegan or vegetarian. I've been vegetarian a long time so I'm a bit of a pro at making virtually any recipe vegan or vegetarian. One of my favorite things to do is to take a heavy meat or dairy based recipe and make it a healthier vegan or vegetarian dish.     I often go to http://www.punchfork.com and set it to vegetarian (at the top of the page).

    They collect the most popular recipes from all around the internets and post them. I've made some delicious veggie burgers from their recipes. And they're continuously updating and adding new recipes so there are always new things to try out.

    That sounds delicious! Yeah I'm getting kinda tired of tofurkey sausages wrapped in whole wheat tortillas with peppers. Do you know about how many calories the chili is?
  • I started making it while I was doing weight watchers and it averaged about 3 points a cup.... My best guess is about 175-200 calories max a cup and it is full of protein and fiber so keeps you full for a while.
