OMG, this stuff is absolutely amazing! Thanks to all of you that mentioned it on the pumpkin thread.
I used:

1 can Libbys pumkin
1 small box vanilla sugar free instant pudding
1 tub fat free cool whip
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp ground cloves

It is WONDERFUL!

    I. Love. Pumpkin. I have a whole Pinterest board devoted to pumpkin. Last night, I made a Crumb-Topped Apple Pumpkin Pie. I'll have to try your fluff!

Another option is to use sf/ff butterscotch pudding instead of the vanilla pudding - gives it a different taste.
  • what do u do with it? throw in blender? fold in?

gretchens, I just put the pumpkin in a bowl, then I mixed in the spices with a spatula, then the pudding mix, then the cool whip. I made it yesterday, and put it in the refrigerator covered. I put it in one of the bigger bowl size glad ware bowls. It is the consistancy of pudding kind of. I have seen recipes with milk or almond milk, but it adds more calories and would problably be a thinner consistancy. It is so good.

Oh my! This sounds fantastic! But we don't really get most of these things in Germany. :( I could probably find alternatives for most things but anything pumpkin usually isn't available here at all.

Try using homemade fresh whipped cream there is no comparison, and a dash of ground nutmeg to the whipped cream will take it over the top.

I remember a similar recipe from Weight Watchers; delicious, but I remember it had skim milk. I want to try this version. THX.

sounds delicious - what is the portion and calories per portion?

A little tip, if you enter all of the ingredients in grams when you create the recipe in your recipes (weigh the bowl first so you can subtract that at the end), you can weigh the whole thing, and enter the total grams (minus the bowl) as the serving size. Then when you portion it out for yourself, you can weigh out what you want. It's a little work, but it's easier in the end when you're trying to figure out how much equals one serving.

ETA I hope I said that right. If not, I'm sure you'll figure out what I meant as you do it.

I love pumpkin. LOVE IT. I made this last fall.

It was not good. Flavor was fine, texture was...not.

Just a word of warning - if you're the sort of person who has texture issues with stuff like yogurt, don't bother. Maybe you could use it as some kind of dip or something, but I was so turned off I dumped it before I tried that.
