any good recipes using coconut flour?

Does anyone have some good recipes using coconut flour? I'm more lower carb and just bought some. Would like to experiment with it!

  • I hate to be a downer, but everything I have tried with coconut flour has turned out to be a complete train wreck! It seems to suck up moisture and make things "gooey" inside. I tried pancakes, muffins, banana bread, and waffles. I did read (after the fact unfortunately) that you can substitute upto 25% coconut flour for regular flour. But if you are are going to try it, I would suggest trying to cook in small batches just in case it doesn't work.
  • I saw a Paleo bread made w/ coconut flour which was the first I had heard of it. Of course the company did not give the recipe but listed the 4-5 ingredients in it. If you want to look up the company or try googling Paleo Bread and find the ingredients, maybe you could figure it out. The bread sells for 7.99 a loaf online or I would have ordered some!! Anyway, I plan on trying to make chicken nuggets w/ the coconut flour, among other things!

    coconut flour is really fine...i use it to make coconut milk at home...with added hot water to dissolve the flour.

    you can use coconut flour in smoothies, treat it like dry milk...you know..like the nonfat dry milk

    also i use it to make curries...coconut based curries..Thai and Indian food.

    You can mix some into your oatmeal...or any kind of batter before you bake...

    for low carb food, try mixing it with some avocado and making a pudding...its yummy. and high fiber.
    make a really thick paste with coconut flour and some water, add cream cheese ,a bit of vanilla essence, baking powder and eggs and try making pancakes with that!
