Beans and Rice Veggie Style

So I am a college student who just invested in a Magic Bullet type thing. Got it at Aldi for $14.99 talk about awesome. Anywho...I always look for sneaky ways to use items I can smuggle from the dining hall (hey I pay for them anyway) and make into yumminess back in my room. Well let me tell you....Black Beans and Rice is super good for you anyway....wanna make it healthier...Black Beans and Cauliflower Rice.
For the Rice:
1. Break into small flowerets
2. Was and dry florets
3. Put in food processor
4. Grind till looks grated
5. Put in microwavable container with lid
6. Depending on amount microwave 2-6 minutes. DO NOT add water. (I used one cup cauliflower and just microwaved 3 minutes)
For the beans
1. Open can of beans
2. Pour desired amount in microwave safe container
3. Heat for 20-30 seconds
4. Mix in with rice
The last stem is crucial. Eat and ENJOY!

rice is perfectly healthy. how about having brown rice and keeping your caloric content where it should be?0

This is just a nice alternative to rice when I need a small amount to fill calorie limit for calorie based snack.
Also sometimes you just aren't in a rice mood because you want another kind of starch.
I don't know I just like it so props to me for my recipe.0
