Not Hungry...advice?

Hey all...as some of you remember, I posted just a short while ago about being constantly hungry after 1300 Calories, was advised to open up my diary, and given GREAT advice on eating better....well, now I have a couple questions again lol

Since making the recommended changes (and I forget to log water, so I make a guess at the end of the day), I get to between 900 and 1000 Calories and am not hungry....I've had a couple days that have been REALLY close...but those have been days that my husband took me out to eat (one was out of town, and one was for a nice dinner since we didn't get to go out for our anniversary).
I've been on vacation from work since last week Saturday - starting tomorrow, I go back to work (8 hour shifts 3 to 5 days a week, and depending on the shift, eat with my co-workers either 5 or 2 hours into the shift). Meals are provided by my employer (think of high school cafeteria food). It is actually a requirement of my job that I eat pretty much what the kids are eating to role model, which I'm fine with, the meals I have tracked have been around 350 to 400 Calories (on the high end).
I went two days (I think or maybe only one) without soda, and was Mrs. Cranky Pants - so I'm sticking with one soda a day...

What are some suggestions that I could do to up my Calories another 200 or 300 on days like today when I'm simply not hungry, but MFP is telling me I'm "eating too few Calories?" Any light snacks that I can try? Thanks in advance guys!

    1/4c of almonds=170 cals
    1/2c Greek yogurt + 1/2c granola= around 225 calls. Add fruit for more calories.
    Banana/apple with 1T nut butter= around 200cals
    Toast with 1T nut butter= around 200
    Lowfat milk+ scoop of protein powder=around 240 calls

    Lots of bars you could eat. LaraBars are super easy to make on your own.

    Oooo...I forgot about almonds :)

    my hubby doesn't like me getting bananas because we never eat all of them :) but I could sure try some yogurt :)

    Fruits - easily takes up 200 calories.
