I went shopping... I went crazy... Help!

Hello,

So heres the deal.... I went shopping yesterday SWEARING I would eat more veggies (Damnit!) and bought a bunch of stuff for this week's lunch and dinner.

My delimma? I didn't think anything through and just bought a bunch of random stuff that I like.I am looking for recipes/ideas with the ingredients below. HELP!!!!!


Cabbage
Green, red, and orange sweet bell peppers
onion
garlic
Cremini Mushrooms
Zuchinni
Squash
canned low-sodium black beans
Green Beans (the snappy kind)
Canned stewed tomato
Thyme
Black pepper

Some other stuff I have in my pantry-
Rice
Morning Star Farms Grillers Crumbles (Like soy-ground beef)
Greek Yogurt
Spaghetti noodles
Vegetarian chili
Lots of different canned/dried beans
Eggs

Any ideas? As i'm sure you know (from the above) I am a vegetarian. Recipes/meal ideas would preferrably have 20+ grams of protein. ;)

    you could make a really good vegetable risotto with some of those ingredients or stuffed peppers :) (although to do it properly you might want to grab some risotto rice)

    Make a meatless stir fry with your rice and veggies! Also, instead of soya sauce use the juice from the canned stew tomato.

    Thats looks great, stir fry veggies, h e l l I would use some of each. You can add it to rice, or pasta or use any of the meats as a entree. It looks great to me. You could even make an awesome omelete... I love the crumble in it, with onion,s mushrooms, peppers, zuchini.. You did really well hun!

    Stuffed peppers is a great idea.

    Brown your veggie crumble and season. Add stewed tomatoes along with any other vegetable you like, diced to bite size. Stir in a cup or two or rice, and load into a few peppers. Bake until peppers start to get soft with a browned edge, and top with some shredded cheese.

    ETA: adding beans would be tasty and increase protein.
