Fall Acorn Squash Recipe! My husband even liked it!

1 Large acorn squash
1 box Roasted Garlic Cous Cous (4 servings)
1/2 pound ground beef or ground turkey already cooked
1/2 cup Craisins
2 Carrots
2 Celery Stalks
about 1/4 Cup chopped onion

1. Cut squash into quarters, and scoop out the seeds.
2. Pour enough water in the baking dish to cover the bottom. Put squash in baking dish at put into the oven at 400.
3. Squash will need to bake for 40-45 minutes or so
4. After about 35 minutes, put cous cous in a microwave safe dish, and prepare according to boxed directions, but also add craisins.
5. Chop the veggies. Stir veggies and ground beef into the cous cous mixture.
6. Put cous cous mixture over squash in the baking dish. Bake for another 10-15 minutes.
7. Let food cool a few minutes before serving. Enjoy!

Its is delicious. You get a little bit of sweet from the cranberries, and little crunchiness from the celery and carrots.
