finding calories in fried foods?

so i am not a big fan of fried foods but after work last night i had a serious craving for fried motz sticks with marinara. I decided to make my own using light string cheese and egg roll wrappers. at first i baked them and it was NOT AT ALL what i was craving. So i decided to bite the bullet and fry them as I was way under my calorie goal for the day.
my question is, i can obviously find out that the string cheese was 100 cal, the egg roll wrappers 130, but how much do i factor in for frying them? I used light canola oil. Can anyone help me figure this out? I want to make sure im documenting everything.

The only thing I can think of is measure the amount of oil that you put in prior to frying, and measure the volume afterwards?
