Do calories "cook out"?

Like, I've been reading some great recipes on here, and I was curious, when you cook something, is the total caloric intake going to be the sum of the calories of all the ingredients? Or do some of the calories "cook out" of the dish?
Also, if you have a recipe, how do you calculate calories per serving?

It is possible to cook out some of the fat, which would lower the calories.
ETA: if you enter the recipe ingredients in the MFP recipe section it will give you the calorie count per serviing (you choose the number of serviings per recipe)0 -
When I grill, I use a George Foreman Grill, and I make sure to look up the George Foreman version of whatever meat I'm cooking. Hope this helps!!0

i assume if you manage to light it on fire it will lose calories. And yea, if you cook off some of the fat it will reduce total caloric content (for example: You boil some sausage, cut them open and drain out the grease).0
