Question: Do you count just "working" as exercise?

So, I have a question for you folks. I am making the change to get healthier and first step was addressing the foods that I eat. I've got a better handle on knowing about that. It's still a work in progress, but there is progress. So, now I look at the exercise piece. I have a water zumba class of one hour that I go to each week at the gym, (though I missed it yesterday). I have two teens (well, one is a tween)... I will practice volleyball with my older daughter or walk with my other daughter outside with the puppy... I don't really count those activities as exercise. The other thing, my job is pretty physical, I work with vulnerable adults in the community and take them places and end up having to work with them. So, I'll be on my feet walking for 4 to 5 hours a day. I'll be stocking inventory on shelves, helping them sweep or use equipment. My question is, would you count that as calorie burning exercise? I had it in my head that I'd only count the activities that I did in "exercise" mode. But now I'm wondering if I should count that stuff too.

As far as exercise goes... I have to do low impact. I have a genetic condition that affects my joints. I've got a slightly malformed hip joint and have DDD and arthritis in my spine. I tried the P90 weight video, but that's a little rough on me... so any other ideas for videos that are good? I can swim and do water activities at my gym, but I'm thinking of having a short video that maybe I can do in the morning while my daughter gets ready for school. I have a special needs child and I have to give her lots of time to get ready in the morning, so I think I might be able to slide a 20 minute daily workout in there.

Well, I got a little off my topic. I'm rambling a bit here at work :)

    What did you put your activity level as when inputting your details: sedentary, lightly active, moderately active etc?

    It will be factored in already if you choose the appropriate level.

    Entering your work as exercise is tricky
    you list your lifestyle as active so that provides you with more calories
    as compensation.

    I am an aerobics instructor, and was going to sing the praises of water exercise
    but I see you already know about that.

    There are a lot of low impact exercise DVDs on the market
