Low Carb/Calorie Spinach Mozzarella Stuffed Chicken
Today I've made the most delicious low carb meal I think ever. It's pretty simple and had only 4 carbs in it all together, most from the spinach.
Serves 2
2 Boneless Skinless Chicken Breasts
1 Package Low Fat Mozzarella (should come in a bag with a ball of fresh mozzarella)
1 Egg (you could just use 2 egg whites for more protein/ cut calories)
1 Bag of Spinach (200g or so would work)
1 Garlic Clove
Fry Light/EVOO
-Set oven to 180c or 300f (ish, sorry haven't baked in America in a while)
-Spray pan with fry light (3 sprays) or add a drop of EVOO, not much is needed just to cook the garlic a bit.
-Crush garlic and add to pan, cook for about 3 minutes then add the Spinach and cook until wilted, set on the side to cool.
-Slice each chicken breast in half, then tenderize until flat, season as desired
-Grate the mozzarella cheese (seems impossible cause it's a wet cheese but I just kinda push it through the holes)
-Add egg to mozzarella cheese
-Mix together and add the spinach, it should be just warm
-Season the mix as desired, I added a few jalapenos because I love spicy food, you could add more veggies or bacon or literally anything you want to it.
-Spread a good amount of the mixture on the chicken then roll the chicken, if it won't close just pop a tooth pick in there
-Cover and bake for 35 minutes or so and voila!
