My son, the aspiring chef, is currently collecting Victorinox brand.

I have a Victorinox Forschner bread knife, and it's great. Apparently, their chef's knife is great, too, per Cook's Illustrated.

I have a Henckels Professional "S" Series Santoku. I love, love, love it -I have been using it for five years.

However, you need to try them out, it's like trying on shoes, lol. For instance, I hate kershaws, not because there is anything wrong with them, but because I don't like the way they are weighted, and they don't balance right for me.

I've been working in the culinary world for 10 years now, the one overrated knife I will advise against is a cutco. I have gone through 3 of them, the handles are terrible, they dulled so fast and getting them sharpened was a pain!
Granted, my knives get a much more intense workout than most kitchen knives, but they just aren't even close to worth the price.

^ THIS! I used to work in a kitchen store or sold a number of brands. The good knives, Wustof, Shun, Messermieister, et al, are almost always going to be really good (sometimes they do low quality lines too though especially Henkel). The big thing is you need to try them out. Go to a Sur La Table or William Sonoma and ask to try the knives. The size and weight of the blade or the shape of the handle that you prefer will be different than others. To start look at the 8-10" chef knives or santoku knives. They are a good "one size fits all" type of knife.

My personal favorite is a 12" Chroma Chef's Knife. Awesome.

    Yes.. Henckels..
Get the 2 men or 3 men (not the 1 man)

    twinon.gif

Difference is where its made 1(china) 2 (Germany) 3 (Japan) and the quality of steel.

Chefs Knife or Santoku are the best.

I need a good knife, too. So I can slice up the perfect accompaniment to my fava beans and a nice chianti.

Wustof Santoku 7", it's pretty much the only knife I've used in years with the exception of serrated knives for bread or tomatoes.

I have an ancient carbon steel mini cleaver that I use for pretty much everything. I love it.

I love my wusthof knife - the bread knife cuts tomatoes like a DREAM - I use the Sontuku knife for everything else. Go to Williams Sonoma and ask to hold the different knives. I liked some handles better than others - it's a personal thing.

Wusthof has a lifetime warranty. One of my handles cracked and they sent a replacement.

Also, read up on the difference between hammered steel and stamped steel blades. Some are more fragile than others. I'm kind of hard on things, so I opted away from hammered steel. It's beautiful though.

For a good chef knife I would go with Japan made over German made. For set's I'm really not sure. Shun's are cool but I end up USING my Global and just LOOK at my Shun.

I purchased a set of Cutco knives about six months ago and I am totally pleased.
My Father bought his about 15 years ago and still uses them.
My only complaint is that I was three glasses of rum into it when the guy came to sell them to me and I ended up purchasing a VERY nice K-Bar that I really didn't need (but love anyway)
