Hi! I was wondering if anybody had any good (and healthy) soup recipes to share! I love soup in the fall. And I love to use my crock pot.. yummm.

Spinach Tomato and Orzo soup! It works great in the crockpot, but be sure to add the Orzo during the last hour or else it will soak up ALL of the water. It is also really quick if you're just whipping it up at the last minute on the stove and don't have time to wait for the crockpot.0 -
Not doing their program anymore, but I always make WW Hot and Sour Soup. Can add or delete veggies / meat as you see fit!

In my crock pot I make a lot of bean soups, just follow the directions on the dried bean package and add a ham bone and some veggies.
Beef Barley works great in the crock pot too, just be sure to follow the barley directions. I didn't and it was overflowing barliey!! I throw mushrooms in cuz I love them in everything!

Just made this today!
Leek and Potato soup:
2 large white potatoes, diced (I keep the skin on for extra nutrients)
2 small yellow onions
2 leeks (white and light green part)
3 cloves of garlic
1 tbsp of oil
4 cups vegetable stock
Half tsp of salt
Black pepper to taste
(I added a teaspoon of Tofutti vegan cream cheese to the pot right at the end instead of a swirl of cream/cream cheese, because I don't eat dairy)
Makes enough for 4 servings of 170cals (I entered the recipe on MFP to check)!
1) Heat oil, onions potato and leeks until onions are translucent
2) Roughly chop the garlic cloves, add to pan with the salt and pepper and cook for a further 2 minutes
3) Leave the pan on a low heat with the lid on until potatoes start to soften slightly
4) Add the four cups of stock and replace lid. Cook until you can easily "smush" one of the potato chunks with the back of your spoon.
5) Remove from the heat and either blend with a hand blender of in a normal blender a cup at a time. When the whole soup is blended, put it back in the pan, stir in the cream/cream cheese/vegan cream cheese if liked. If you don't like it, just stick it in a bowl and devour with a piece of wholemeal bread!0 -

If you like different kinds of legumes and lentils, there's a soup mix you can get either in bags in with the dried beans at the grocery store, or in bulk stores. It's just a mixture of different legumes, lentils and sometimes rice, no seasonings or anything. I throw a cup of this in the slow cooker with onions, celery, garlic and carrots, some broth and fresh or canned tomatoes, add whatever other vegetables and seasonings I feel like and have a very filling and low calorie soup. It's a good way to clean out the frig, too.0

I make such a simple soup - I say make, there's not much making which makes it ideal for a quick lunch. I get a Tesco Italian chopped tomatoes with basil in rich tomato sauce and have that as soup. I add a few spoonfuls of organic houmous which makes it creamy like cream of tomato soup. Add some fresh basil. Voila! 390g box plus 1 /4 pot of houmous (50g) = 206 calories, 2g of saturated fat. It tastes lovely and simple!0
