Cardio Levels - Light, Moderate, Vigorous

Hello everyone! I need some help please. The cardio exercises are separated by the level of effort, such as light, moderate, vigorous, etc. I usually stick to the treadmill but was told to "mix it up" so I got on the stationary bike today.(Real daring, I know, lol.) It had levels from 1-9 so I set it on 5. I didn't let the RPM fall below 70 for the entire time I was on. I had bursts of speed so my HR varied between 125-145. Based on the information I've read it seems a lot of stock is put in the HR. But at 144, the machine tells me I'm working at about 85% of the maximum HR for my age and yet other definitions say even at a "moderate" level, it should be difficult to speak. Can anybody explain to me how this process works? Thanks in advance!
