kohlrabi recipes.......

new veggie to me... got a large one out of the CSA box this week.. I have eaten it raw, mixed in with tuna fish,grilled in with peppers and onions....

Any one else have any great ideas for this huge, ugly ball of goodness??

  • This is not the healthiest recipe but it is amazing! It was my favorite as a kid.

    -Peel and slice into disks and parboil to soften a bit.
    -Meanwhile, make a bechamel sauce. 1 & 1/4 cups of milk, 2 tbsps of flour and 2 tbsps of butter. Make sure the milk is warm before you add the butter and flour. Stir to thicken, add salt & pepper.
    -Melt some grated Swiss cheese into the sauce. (I like Gruyere, is is strong). Melt about 4 or 5 slices shredded into the sauce.
    -In a casserole dish (spray it with Pam) layer the kohlrabi and the bechamel sauce.
    -Put some grated swiss on top and bake until you can pierce it with a knife. Make sure the cheese on top is brown and bubbly.

    I have made this with lowfat milk and used Earth Balance butter. You need some fat in the milk or it doesn't work.

    This would be enough for two large or 3 medium bulbs of kohlrabi.
