Outback Workout Help!

Tomorrow we start a 3 day road trip to go back to Outback Australia, (have been on leave without pay for a year in a town with boxing and the gym) The Indigenous community where we will live is 300km or 200km in the other direction from the nearest gyms. And let’s just say that health and exercise is not really a community priority although it is ours! Luckily I have a friend coming with me who is also on MFP so we can support and motivate each other.
We have ordered Insanity, already have Zumba and some Michelle Bridges stuff and have enough knowledge to create our own work outs with a little help from sites like the Tough Mudda site. We will make the drive to one of the gym's two out of three weekends and will continue with our Muay Thai training the best we can (Hopefully also getting some of the younger men in community involved) Internet connection is available from work but You Tube is blocked. We are hoping to get the internet on at home but this may not be possible.
We would love to hear from anyone who can help us with ideas for exercise on the three day drive (we are planning to stop and run etc. on the side of the road) and ways which we can stay focused, motivated and on task in a hot desert environment with very little equipment and no facilities.
