Best Not-Tuna Salad I've Ever Had (Vegan)

Found this on spark today, have to share:
1 Can garbanzo beans (15 oz)
1 Stalk celery
1 Carrot, grated
1 Quarter cooking onion
2 Tsp yellow mustard
2 Tsp Pickle relish (sweet or dill)
3 Tbsp vegenaise/nayonaise (nutes are with vegenaise high omega-3)


1) Open beans and pour contents into strainer. Rinse and then shake them dry.
2) Move beans to a bowl and mash up with a fork or potato masher until they're approximately the texture you'd want.
3) Add in the rest of the ingredients
4) Stir, and serve. I put it on a whole wheat pita wish some lettuce and a tomato slice.

Makes 4 BIG servings.

Cholesterol: 0mg
Sodium: 455mg
Sugars: 1g
Fiber: 7g

So so so good! You can change it up for lower fat if you'd like, but as far as I know most of the fats in this are healthy for you (at least the way I made it).

    Awesome - thanks so much! I'm a pescetarian but can not to bring myself to eat any seafood out of a can (makes me gag just thinking about it!) But I do miss good ol' tuna salad - I'm definately giving this a try!
  • I make this ALL the time! Except mine is more of a Not Chicken Salad. Even my picky 13 yr old daughter loves it! I put it in pitas or bread or even just on top of some lettuce for a filling salad. Isn't vegenaise awesome?! Just like the real thing.

    It will either be with the condiments (ketchup, mustard, etc) or with the pickles. I'm not a fan of relish, but LOVE pickles (I know, doesn't make much sense) so I just dice up pickles instead, since I already have a jar (or five :wink: ) in my fridge.

    Just wanted to thank you again for posting this recipe - finally made it for lunch today and it was soooo good. Even my carnivorous husband just had to have a bite and he even liked it! Thanks so much!
