Vegetarian Chili

I was craving Chili today and decided to try something new. At first I was going to go with ground turkey and just have some turkey chili, but opted not to use the meat and just add veggies instead. My outcome was AMAZING. And when I added it up on the recipe counter, the calories were pleasing too!

My vegetarian chili -

2 small cans Rotel (I used one original, and 1 mild)
2 cans light red kidney beans
1 13 oz can mushrooms
1 Packet of French's Chili-O
Half of a green pepper
Half of a yellow onion
2 medium sized potatoes
about 1/4 cup chopped celery

Bring to boil, continue to simmer until potatoes are cook thouroughly. Makes about 4 servings. Serving size is about 1 1/2 cups. (So you could actually lower the serving size and make a few more servings!)

My only MAJOR concern is the insane amount of sodium...YIKES!! This was a test run, I figure next time around I'll use fresh mushrooms instead of canned muchrooms and maybe instead of Rotel, I'll use a lower sodium can of tomatoes?

I added 2 TBSP of fat free sour cream on top. (20 calories) and VIOLA! Super yummy!!
