I am not a picky eater. But I don't eat beans. I can't stand them. Anyway does anyone have any good recipes to share for lunch? I am always skipping lunch because I always think of making meals for breakfast and dinner. Thanks.

I've been doing a lot of half turkey quesadilla. Tortilla folded in half with a little cheese and some shaved turkey.

I do half sandwiches often too, or wraps, and a lot of salad.

Hey there, if you have facebook, check out my healthy cooking page. https://www.facebook.com/TheSassyGourmet

Another thing you can do is put anything you would on a sandwich over baby spinach or lettuce as a salad. Hummus on a flat bread wrap or an Xtreme wellness tortilla is wonderful too.

I also use left overs from the night before and throw them all in a bowl of Quinoa.

i do lots of sandwiches. i have been avoiding deli meat more recently though due to the sodium content (yikes)!. hummus with feta cheese and greens on bread is very good and surprisingly filling. i also have been doing a lot of classic peanut butter sandwiches ... but on a bagel instead of on normal bread. for sides i like fruit cups, granola, carrots.
  • I like Tuna, but not just plain. I usually add peppers and onions and lettuce to it, along with some spices... :)
