I just made this and it was very good.

I only made 3 servings, but can be doubled.

1 tbsp butter, melted
1 tbsp honey
1/4 tsp. ground cinnamon
1 egg
1 egg white
1/4 cup orange juice
3 slices of bread

1. In a bowl, combine butter, honey, and cinnamon. Spray a baking pan with cooking spray. Pour mixture into bottom and spread to coat pan. In a shallow bowl, beat the egg and egg white, and orange juice. Dip bread into egg mixture and place in prepared pan.

2. Bake at 400 degrees for 15-20 minutes or until golden brown. Invert onto a plate. Serve with honey or lite maple syrup.

I think next time I will use bread with some fiber. It was a last minute recipe I found and I used what bread I already had.

I think I now know what I'm having for breakfast tomorrow. :) I have all of the ingredients (have to buy a spray for the pan). This sounds easy and tasty. Thanks so much for sharing the recipe.
