Struggling with Vegetables

I am struggling with eating veggies in a day,I just don't seem to be able to get them in each day, any advise to make this easier for me?

If you don't like many vegetables, you can try something like baked kale chips, where the kale is crispy and almost like a thin potato chip. You could try mashing some other vegetables in with mashed potatoes, if you like those. If you are fond of sandwiches, add tomato and/or onion, avocado, cucumber slices, lettuce leaves. . . there are all kinds of vegetables you can "hide" in sandwiches.
Try having baby carrots or celery sticks on hand to snack on in place of chips, or use cut up veggies with dip.0 -
I'm the opposite. Veggies I'm fine with, it's eating the fruits that I have a hard time with. I still don't get in the recommended amount most days. For me, I use frozen veggies in almost everything I cook. And I eat fruits for snacks. What do you like to eat?0

"Hide" them in your normal foods.... Like mashed potatoes? mix in corn... Two birds with one stone.
V8 juice. if you don't like it cold you can warm it up and have it as a soup... dip crackers or grilled cheese.....
Sample new veggies and cook them different ways. Sometimes you may like one thing cooked over raw etc. I hate raw broccoli, love it when it's stir fried. Hate cooked cauliflower, love it raw. But this may give you more inspiration as to how to include more into your diet and meals.
Add some dip or dressing for raw veggies.... like ranch salad spritzers so it's less calories, same flavor. Eat it as a snack. between meals or a late night snack.0 -
Ok start with the veggies you like the flavour of. Then look for new ways to prepare them - steaming gets old quickly.
The major way I upped my veg intake was swapping out the carbs I would have had - pasta, rice, potatoes - with veggies - as long as you have a wide variety and you prepare them in different ways you should never get bored. Roast broccoli for me this evening and it was YUM0 -
I've struggled with this, too. If you like to cook, (I do), I seek out recipes that call for veggies.. I have a fabulous one I found last winter... I eat salads and sneak all kinds of veggies in there.... I have actually developed a preference for veggies on my pizza or flatbread... and prefer it over any kind of meat.. I enjoy those greek yogurt dips and will have those with fresh veggies..
I never used canned... mostly always they are fresh.. sometimes they're frozen.
I've also tried to incorporate legumes... I love lentils... and cook with them.. same with garbanzos..I add them both to things.
and have found cooking pasta like orzo with a nice sauce and some crunchy veggies and feta is the bomb for a summer salad..
This was not the way I grew up eating... but I've developed this over time. I'm almost a vegetarian...but not completely.
Another thing that's delicious are those black bean burgers... I use those over hamburgers now--

Now it's getting colder (well, unless you live somewhere like Southern California I guess) then it's a good time to make stews and casseroles and put loads of veggies in them - carrots, parsnips, swede, sweet potato, peas etc. I always make a veg and lentil soup too.
Roast veg are also yummy - chop them up, add some garlic, herbs, white wine vinegar and a bit of olive oil and cook them in the oven. I did courgettes, butternut squash, sweet potato and carrots today.
Stir fries are also a good way to get lots of veg.0 -
Why are you not getting them in?Is it because you don't like them? Get stuck eating at work a lot?0
