Has anyone tried this, or any tips on using less egg yolk in the oopsie bread recipe?

Results/advice/opinions before I make a mess of my kitchen would be appreciated!

I will be using this recipe -

    Hmm intresting recipie,
The eggs sre pretty central to the bun, so you may have troubel.
You could try an egg replacer, or some xantham gum.
I've had a lot of luck with xantham, and beating it into peaks. I even managed to make meringes a few times.

You could also try just the egg whites.

I think just give it a go and see what happens.

I am fine with the egg whites, I was wondering if anyone has tried it omitting the yolk part.
