I'm just entering my 2nd trimester of pregnancy and vegetable soup is the first thing I've felt like cooking. The problem is everytime I try to make it, it's horrible. My mom used to make it really well, but when I ask her how she says, "you just put it together".

Just made some today yummmm and pretty easy
What ya need
Few cloves of garlic
1 onion
2-3 large carrots, chopped
2 celery stalks chopped
1-2 zucchinis chopped
Quarter or more head of cabbage chopped
Green beans chopped
Stewing beef, I use a lot probably equivalent to 2 steaks
1 or 2 large can of chopped tomato, depending on how much tomato you like
Stock
Sauté garlic and onion in olive oil use as much garlic as you like.
Add carrot and celery sauté for a few minutes.
Add everything else and simmer for about an hour, and it's done.
Season with salt and pepper. I usually add a bay leaf while it simmers.
All above veggies are options. I usually add whatever is in the fridge. Like you could add chopped cauliflower etc.0 -
