Chicken and Wild Rice Soup

*** I haven't made it yet, but I got the recipe from a friend. I put the calories in on Spark Recipe builder and it's only about 300 calories for 1/4 of the recipe (I guessed it would make about 9 cups from 9 cups of liquid so I put in for 4.5 servings to divide it). I also build the recipe with 12 oz of chicken because I like the chicken/wanted more protein.



3 oz uncooked diced Chicken breast
1 diced med. onion
1 pkg Uncle Ben's long grain and wild rice (original)
2 chicken bouillon cubes
2 stalks diced celery
3 sliced carrots
7 c water
2 c skim milk
2 TBSP corn starch
2 TBSP water

combine chicken, onion, bouillon, celery, carrots and water. bring to a boil and simmer for 30 min. remove chicken and add rice to water mixture. simmer 25 min or until rice is tender. add milk and diced chicken to soup. Mix cornstartch and water for paste to thicken soup. Optional - add fresh mushrooms cut in 1/2 or 1/4 during the final 5-10 min of cooking.
