What can i do with beans? I have a whole assortment at home....

    add to salads, soups, mush them up with garlic for hummus

    Black bean salad! Adapted from skinnytaste.com

    14.5 oz black beans
    1 c frozen corn
    1 large avocado, cut in cubes
    1/2 medium onion, diced
    2 medium tomatoes, diced
    1 tbsp olive oil
    2 limes, juiced
    salt & pepper to taste

    Mix all together in a big bowl! LOVE.

    Black beans-make enchiladas, fajitas
    Kidney beans-beans and brown rice cooked with bacon and tabasco sauce
    mix them all up with water, salt, spice and a ham hock and make bean soup

    throw them together with some bacon crumbles (turkey bacon)...some turkey sausage (browned and drained) 1 onion diced...some ketchup, mustard a little brown sugar..throw it in a big roaster ..put in the oven on 350 for like hour and 1/s...there you go!

    if they're dried, soak em the previous night....then boil until soft ( or mushy..if you like it that way! lol )
    portion the cooked beans when theyre cooled..into baggies and freeze the excess.

    I suggest draining and rinsing canned beans really well..too much sodium.

    You can add cooked beans to soups, over salads, baked with chicken or bacon etc, they are great with scrambled eggs, or in an omelet.

    Pinto beans are great to make Mexican soup with. or Refried beans...the healthy way.
    Black beans go well with salads and some stirfries
    Great Northern beans are great in soups with lentils etc.
    Kidney beans are usually good in chili or indian recipes ....
    Chickpeas are great to make Hummus with...or boiled with salt and added to salads. YUM!!
