Anyone have a good, easy cod recipe?

Line a cookie sheet or cake pan with foil, and spray the foil with a light cooking spray. Place your fish fillets (skin-side down, if it has any) on the pan. Season with lemon pepper, or fresh black pepper and a sprinkle of lemon juice. Bake it in the oven at 350. Average frozen fillets take like half an hour, but it depends on the fish. If you have an internal heat thermometer, the thicketst part of the fillet should be 140 degrees.0

San Diego baja-style fish tacos ( from the hungry girl cookbook)
FOR TACOS:
4 small white corn tortillas
8 ounces raw cod, cut into 4 even strips
1 cup thinly sliced green cabbage
1/2 cup fiber one bran cereal(original)
1/4 cup fat free liquid egg substitue
1 Tbsp seasoned rice vinegar
1/4 tsp garlic salt
1/8 tsp onion powder
1/8 tsp garlic powder
Salt , black pepper, additional seasonings, to taste
Optional: chopped cilantro, lime wedges, salsa
FOR SAUCE:
1/3 cup fat free mayo
2 Tbsp fat free sour cream
2 Tbsp chopped sweet or yellow onion
1/2 tsp lime juice
Dash salt
Dash cayenne
If using a toaster oven , spray the rack with non stick spray and line the bottom with aluminum foil. Then preheat toaster oven to 450.
If using a broiler pan, preheat oven to 450. Then line the bottom of the broiler pan with foil and spray the pan's rack with nonstick spray.
In a small bowl, combine all the ingredients for the sauce and mix well. Refrigerate until ready to assemble tacos .
In another snall bowl, toss cammage with vinegar until lightly coated . Refrigerate until ready to assemble tacos .
In a blender or food processor, grind fiber one cereal to a breadcrumb-like consistency. Place crumbs in a medium bowl. Mix in garlic salt, onion powder, and garlic powder. Add as much salt and pepper as you like. Feel free to season crumbs with extra spices as well.
Place egg substitute in another medium bowl. One by one, coat fish strips in egg substitute, give the a shake to remove excess egg substitute, then coat wuth breadcrumb mixture.
Spray the tops of the breaded fish with a light mist of nonstick spray. Place them on the rack of either toaster oven or the broiler pan. If using the broiler pan, place it in the oven. Cook for 12 minutes or until the fish is flaky and the tops are brown and crispy.
To assemble the tacos, warm tortillas in the microwave for 5 to 10 seconds. Set on fish strip in the middle of each tortilla. Top each piece of fish with one-fourth of the cabbage followed by one-fourth of the sauce. Serve with cilantro, lime wedges, and/or salsa, if you like.
Makes 4 servings
Per Serving(1 taco with sauce) 152 calories, 2g fat, 499mg sodium, 23.5g carbs, 5.5g fiber, 2.5g sugars, 14g protein0 -
use a ziploc "Zip and Steam" bag and microwave. put a little lemon pepper on it or other spices and it will be ready in a couple minutes.0

My easy white fish meal is:

2. a can of stewed or diced tomatoes (any kind you like)
add to casserole dish and bake at 350 for around 20-30 minutes (depending on how thick the fish is)
Not only easy and yummy, but really good for you (and the tomatoes keep the fish from drying out).

Put a good dryrub on it whether it is jerk seasoning, cajun, italian ect... Put it in a 350 oven until done usually 20-30 minutes and have a fresh lime wedge to squeeze on there and enjoy! Flavorful and guiltless!:happy:0

That's what we do - super yummy DH got it from the Biggest Loser cookbook - I think he adds sliced green olives to the tomatoes.0 -
