Breakfast idea

Ok, so technically it's not a recipe - but I love this new breakfast. It does require a bit of prepping ahead, but it's nothing terrible.
Basically I take about 2 oz of roasted butternut squash, throw in a couple of ounces of diced ham or turkey bacon, top with a sunny-side up egg and then top with diced green onion. Sounds a little weird, I know. Something about the runny yolks over the squash and the ham with the slight bite of the onion - it just works! And it's very filling. This stayed with me for 4 hours, even through a plasma donation.
To roast the squash - I just peeled it with my veggie peeler, diced it up, drizzled with a bit of oil, (you really don't need much) added fresh ground pepper, cumin, salt, and chili powder and roasted in a 400 degree oven for about 30-35 minutes. You could make this the night before while you're cooking dinner. I usually cook up a small squash (yields about a pound of peeled, diced squash) and divide it up between 4-5 breakfasts.
