A new reciepe I tried and love it
I tried this recipe last night and had to share it. To many of us work long days and are trying to make healthier food choices so here is a easy and quick recipe for all. Enjoy:happy: :happy: :happy: :drinker: :drinker:
Bell pepper Chicken with Feta Orzo
Ingredients:
2 8 oz chicken breast cut into pieces
4 teaspoons of olive oil divided
salt to taste
black pepper to taste
red pepper flakes to taste
1 red bell pepper cut into pieces
1 yellow bell pepper cut into pieces
2 cups of California style veggie mix thawed
1 cups of fresh basil
1 cup of leek minced
2-4 teaspoons og minced garlic
1.5 teaspoons of lemon juice
5 oz of reduced fat feta cheese
Directions:
Cook 1 cup of Orzo pasta till al dente.
Add oil to pan.
Rub salt pepper and red pepper flakes on chicken
Cook chicken in olive oil till done and remove from pan.
Using the same pan saute leek, and basil with garlic till soft.
Add bell peppers and veggies and more red peppers if desired.
After veggies are all soft add in cooked pasta and chicken and lemon juice.
Add in feta cheese after removing from heat.
Makes 8 servings. 1 cup = 1 serving
