Single Serving Pumpkin Recipes

I processed my pumpkins from the farm this weekend and froze the mashed pumpkin in 1 cup containers but I have about a third of a cup leftover. Anyone know of a single serving or easily scaled recipe that I can use this pumpkin in? I don't want to freeze & save such a small/random amount.

    Add it to a smoothie with some banana and greek yogurt.. maybe some pumpkin pie spice too.

    Thanks Elaine...I don't really drink smoothies because the texture bugs me but I bet it'd be a good way to use it for those that like smoothies.

    In case anyone else has some partial cans of pumpkin they're trying to use up, this is what I've come up with so far:

    Pumpkin spice muffins:

    Make about a quarter of that recipe (minus the wet ingredients), mix with pumpkin, pour into 5-6 muffin tin spaces & bake

    You could mix it in with roasted autumn vegetables: butternut squash, carrots, parsnips, onion etc. sprinkle with a little cinnamon and maple syrup and roast altogether in the oven at about 425 degrees for a nice side-dish. Mix with a pasta shape of your choice and some grated cheese for an entree.

    If you have pets, you can also mix in with their food for little yummy wetness and lots of vitamins. My beagle gets canned pumpkin with her dry kibble food each day - about a talbespoon.

    Thanks for the ideas! I love everything pasta related so I might try that. I roasted up a bunch of other farm veggies a while back and froze them so I might just mix it in with those and some pasta with parmesan. Or I might give it to the pup...if he's lucky :)

    I'd say mix it into anything like bread or muffins in place of oil, like you would with applesauce. I was thinking about putting some pumpkin in my morning oatmeal too, I don't know if it's good but I want to try it. I also saw a somewhat indulgent recipe where someone mixed pumpkin with cool whip and sugar free cheesecake pudding mix and froze it or something? That sounded kind of good, but I don't like cool whip or sugar free anything, so I'd probably play with that a bit. Ooooh, I also thought of making some rice pudding with pumpkin in it, but that's not super diet friendly- you could probably make it as healthy as you want, though.     Or some yummy pumpkin soup (it's not 'soup weather' cold where I live yet, but maybe it is where you are?)

    Omaigosh. Mix it with greek yogurt and add pumpkin pie spice. If you add some bran flakes/frosted flakes it's possibly the most delicious thing ever. I also add some protein powder sometimes for nutrients. :)

    I really really really wish I like yogurt (greek or otherwise) and smoothies...it always sounds so good when people make suggestions for them! But then the texture kills me.

    I ended up mixing it with roasted vegetables, ground chicken and a jar of roasted garlic tomato sauce then putting it on pasta. Sneaky vegetables in every serving :)

    I really wanna try the cool whip recipe now...I loved the stuff as a kid but haven't had it in probably 15yrs. Not sure if I'd still like it...since I've been trying to cut out processed foods, a lot of them taste weird to me now.

    I'm thinking next time I might try it with cottage cheese and some chopped glazed walnuts. I really want to like cottage cheese but I think it's going to take a lot of help with other ingredients.

    It is soup weather here pretty much. Plus I'm not one to let weather stop me (first a/c I put in was next to the stove lol)
