No Cheddar Mac'n'Cheese!?

Hi!

So, strangely enough, I can have some milk products (yogurt, sour cream, and mozzarella) but not sharp cheese like cheddar, butter, or milk.

Without using nutritional yeast (was gross), how can I make a mock macaroni and cheese? Any ideas?

    Ok, it has a little nooch in it, but you can leave it out with no problem. And it is totally the opposite of low-carb so it won't help if that's what you're looking for. But it IS delicious. http://www.theppk.com/2011/02/mac-shews/

    I'm making Crockpot Mac and Cheese right now.. and here is what it contains.

    2 cups of milk
    1 can of evaporated milk
    1 egg
    2 cups of uncooked elbow mac
    1 1/2 cups cheddar cheese
    1 tsp salt
    1/4 tsp pepper

    Mix both milks, egg, and salt/pepper together. Put milk mixture into crock pot, add macaroni and cheese, cook for 3-4 hours on low.

    My substitutions would be a can of cheddar cheese soup instead of milk, and a mild cheddar cheese? Maybe that would help?
