Tomato/Cucumber recipe

Looking for some ideas for tomato, cucumber salad...maybe a little feta cheese and oregano.

Any suggestions?

    Another dressing to try is a little rice vinegar and sesame oil.

    This is my dinner almost every night - I love feta!

    I cut up one tomato, half a cucumber, finely dice a little bit of onions, feta cheese to taste, Olives (optional), add olive oil, vinegar, salt and pepper and it is delicious! It is also good with half an avocado and/or Tabasco sauce. I find I need very little olive oil because the flavor of the feta is so good. This will give you a portion for one person.

    Thanks, I did 1 cup tomato, 1 cup of cucumber, 2 T crumbled feta, 1 teas olive oil, 1 sprig of chopped oregano....I thought about the olives and decided to go with olive oil....now, avocado would be nice

  • I've made it before with-

    Cherry Tomatoes
    cucumbers
    red onion
    broccoli slaw (sooooo good - usually by the coleslaw bags)
    and balsamic vinagrette

    and just a bit of feta.

    I think the broccoli slaw made it - good crunch and you're getting an extra veggie.

    Whats also good is tomatoes, cucumber, salt, pepper, marinated in a little EVOO and red wine vinegar. It's crunchy and has a yummy tanginess to them...mmmmmm....my mouth is watering already!
