Vegetarian & Pecsotarian Recipes?

Anyone have any good vegetarian and pesctotarian dishes they'd like to share? Or any websites that you use as a recipe resource?

I get catfish and cut it up then cook it in some oriental orange sauce type stuff. Then I roast some peppers, onions and water chestnuts and mix the orange sauce catfish with the vegetables. Tastes really good
