Pasta dishes, chili beans with your choice of meat, crock pot dishes like stews, roasts, etc.

I think the tip is to get organised - I have time to make meals but I get frustrated if I have to spend too much time cooking and end up saying "stuff it" and choosing fattening convenience foods...

So I make sure I take the time on the weekends to have lots of pre-chopped salad stuff in the fridge (carrot, cucumber, washed lettuce, fresh corn etc)... I also cook and freeze individual portions of rice / chicken breasts etc so there's always the basics of a meal I can just throw in the microwave and add some veggies to. I keep lots of apples / bananas and individual low-fat yoghurts around for quick snacks, and my other tip is to make friends with eggs! A poached or hardboiled egg with some quickly steamed asparagus or some other veg is a really good meal that only takes about 10 mins to make. Your fridge will end up looking like a catering kitchen, full of those little plastic containers, but knowing you literally have to just throw things in a bowl definitely helps!!

    I recently tried this recipe:

    http://www.foodnetwork.com/recipes/claire-robinson/grilled-greek-chicken-recipe/index.html

I used only half the oil called for in the recipe, and used skinless, boneless, chicken breasts. (I didn't grill it. I started it on the stove.) I sprayed the pan with cooking spray and shook off the excess marinade before putting the chicken in the pan, and then finishing it in the oven, as directed. The drawback is the marination time required, but I put it together on a Saturday lunchtime and served it for dinner the same night (maybe only six hours of marinating time). It was still tasty, even with the short marination.

This recipe inspired me to try other marinades. Plain chicken breast can get boring. The nice thing about marination is that you could prepare it one night before bed and then you could cook it the next day when you got home from work. If you make extra, for leftovers, then you have a quick and easy protein source (just pop a few ounces of chicken into the microwave when you need to up your protein for the day).

Look in your library for 5-ingredient cookbooks.

    Good luck!
