Pumpkin recipies

Hello :D
i have a little bit of a new found pumpkin obsession...
i discovered pumpkin was actually quite tasty at the end of the season last year, this year iv caught it early and found the first pumpkins in the shops today ! Wooo!

But ... the only thing i know to make with it is spicy pumpkin soup. Dont get me wrong i LOVE it ... but i dont really fancy living on it... any suggestions of what i can do with the rest of my pumpkin?

    Today I stirred some pumpkin into my oatmeal, along with some cinnamon, splenda and pumpkin pie spice. YUMMY!!

    Also, have added it to plain non-fat greek yogurt, with the same spices - also very good!

    Do you bake the pumpkin first to make it soft? How do you make the soup- I've had pumpkin soups but they've always been creamy.

    I like chop it into chunks, coat it with olive oil, sprinkly with chili powder, onion powder, black pepper and a little dried thyme and bake it in the oven until carmelized.

    You can substitute pumpkin for about any recipe that calls for sweet potatoes or butternut squash.

    Unfortunately here in the UK, we don't seem to keen on pumpkin in the same way that the Americans are, which I wish was different. I tend to turn my pumpkin into a spicy soup simply by frying some (quite a lot) with a very finely chopped onion, adding dried chilli flakes to taste a bit of curry powder and a pint of stock (of your choice, but I use ham or chicken) boil until the pumkpin is mushy and mash (I just use a potato masher for a more 'rustic' texture, but you could use a blender). Then serve with a dollop of creme fraiche and a heap of buttered toast. Nom. :love:
  • There was a thread a few weeks ago with some great recipes. I have tried one that I just love. EASY cheater muffins! I have now made these 3 or 4 times, and each time perfect. These also freeze well. I will pull one out of the freezer and have it for breakfast/lunch whenever. Satisfies my craving for baked goods without the guilt!

    The original recipe was:

    1 box Spiced cake mix
    1 15 oz can of pumpkin

    1. mix together
    2. Fill muffin pan (12 count) completely, these don't rise very much.
    3. Bake according to box.

    I made a few changes based on responses others gave to the recipe.....
    1. I used Sugar Free yellow cake mix
    2. I added cinnamon, cloves, nutmeg
    3. I added a little bit of water, because I thought the dough was a bit too dry.
    4. One time I made 36 mini muffins instead of the bigger muffins, and took them to a church sponsored walk. (Worked equally as well and just as yummy)

    P.S.
    I ate one about 30 minutes ago!

    How much water did you add? I've never seen sugar free yellow cake mix....interesting!
  • Pillsbury makes a sugar free yellow cake.

    I don't add a lot of water, just a little bit at a time until I think it looks moist enough. Next time I will measure and let you know.

    If you make anything containing fake sugar (for an event) please make sure to tell people. Various people can't have fake sugar including pregnant women. Typically the sugar free cake mixes contain Acesulfame Potassium and Sucralose.
  • I do let people know, a lot of my friends are allergic to dairy, wheat, and one friend to many of the fake sugars. I let everyone know what is in whatever I make. I don't want anyone getting sick on my food.
