Peel and cut 1-2 raw sweet potatoes. Cut into wedges (thinner will be crispier, thicker will be softer). Preheat oven to 425. Place potato wedges in large bowl, drizzle about 1/2-1 tbsp healthy oil ( I use smart balance canola) and toss to coat. Then sprinkle in chili powder to taste (about 1-2 tsps). Toss to coat, then place wedges on aluminum foil covered baking sheet. Cook for about 20-30 minutes, turn wedges 2-3 times while cooking. Very simple and SO yummy!

I don't like sweet potatoes, but I am trying to learn :) Partly because they are good for you - and partly because they were .10 a lb at Wal-Mart the other week and I got a lot! Even "full price" they are always really cheap compared to other veggies.

Do you get your fries crispy? I typically burn them. I read all kinds of suggestions from the temp to putting them on broil a couple mins at the end (i turned mine black w/in 5 minutes). What does covering them in foil do? I'm cheap and don't like to use foil so want to know what difference it makes first :)

What I have found works the best for me is slicing them like circles and do it really really thin - like cardboard thin (which is a little thicker than paper thin). Put them on a well Pam'ed pan. Sprinkle with seasoning of taste (I do salt and brown sugar or white sugar about 1/2t salt if not less and 1 T sugar total over 2 potatoes worth of slices). then spray again really good with more Pam and cook on high until crispy - flipping in the middle.

Because the are so thin they do get crispy - a lot like chips.

And the best thing is they have no more calories than just the sweet potatoes (plus whatever you sprinkle on, which is usually like 10-20 cals total)

    They're tasty!

Yes! Chili powder on sweet potato slices is my favorite! So easy and delicious. I've even made this for guests and everyone loves them.

They take forever to get crispy unless you crank the heat way up. I broiled them once and they blackened a little, but were still delicious.
