buttermilk biscuits

I ended up with some buttermilk so I made biscuits - last time I made them they used like 1/2 cup crisco. Yuck (but they tasted good!) and had like 200 - 300 calories each (especially if you brush them with butter when you bake them)

But this time I made these and they were about 65 cals each for 9 biscuits from the recipe - of course if you make bigger biscuits they will have more calories ;)

(I used 1T regular Mayo since I didn't have any low cal) and I used lowfat buttermilk not regular lowfat milk.

When I make biscuits (almost every weekend for my boys), I always use liquid vegetable oil. I end up needed less liquid (water, milk, buttermilk, whatnot), so add the liquid last and just stop adding it in when the biscuit dough starts to stick together.

    Thanks!

I think I'll make these tonight! Maybe add some crushed garlic (we're having spaghetti and sauce).

 OMG these are good! I increased the amounts by 1/2 (but forgot to add garlic like I was going to) and divided it among 12 muffin cups. They were amazing! Even my picky daughter loved them!:flowerforyou:

I like the garlic idea! Sort of like red lobster biscuits!
