Ricotta Pancakes - 3 for 345 calories!
Makes 10 delicious pancakes!
1/2 cup all-purpose flour
1/2 cup whole wheat flour
3 tbsp white sugar
1 tsp baking powder
1/4 tsp table salt
1 cup part-skim/light ricotta cheese
2 large eggs, separated
1/2 cup skim milk
1 tsp vanilla extract
In a small bowl beat egg whites until soft peaks form (you can use an electric mixer, but I just whisk real fast for a couple minutes... it burns calories!)
In a bowl mix together flours, baking powder, sugar and salt. In a different bowl, mix together ricotta cheese, egg YOLKS, skim milk and vanilla extract.
Pour the dry into the wet while whisking, and whisk until just combined. Then fold in the egg whites until combined, but do NOT over-mix.
Cook pancakes on a griddle or in a pan on the stove, using 1/4 cup of batter per pancake. This recipe will yield 10 pancakes, and they're not dinky little 2 inch pancakes. If you're going to do it over the stove, make sure you use a low enough temperature so that the outside doesn't burn before the inside cooks. Hold pancakes in the oven at 200F while you're cooking up the rest!
These are super delicious, and taste like REAL pancakes. The original recipe called for more sugar, but I reduced it. I think you could reduce it even more, maybe to 2 tbsp but of course be careful because you start changing the consistency of the pancake when you remove something... Hope you enjoy them! A pancake isn't the healthiest choice, but these are yummy without doing much damage!
