I'm a pretty disorganised shopper and therefore can fall victim to the old 'there's nothing to eat and i'm hungry' trap where i go to the supermarket to get something healthy and end up with something bad. Luckily, i realise this, so have been working to build up a stock of ready-meals in the freezer!

Today i'm making three kinds of soup - Roasted Kumata, Capsicum and Lentil (this is a recipe i've already tested and it's gooood!), Roasted pumpkin and chick pea, and curried green pea. the second two are off the weighitup website.

will return with results later today!

triple soup win!! all three soups are made, weighed, portioned, labelled and in the freezer (except for one portion of the pea soup which is in mah belleh!)

as i said, i already knew the kumara soup was good, but the other two are pretty delish as well.

i wasn't feeling too enthusiastic about the pea soup, but it actually came out really nice, and just the right amount of spicy. i'm pretty fanatical about weighing my food, so worked out the calories for the recipe and then divided it to get serves around 300cal, but when i tallied it up, the entire pot of soup was only 650ish calories, so i would have only had two serves. that would have been fine had those two serves not been about 750ml!! so.. divided it into three generous serves which are a bargain at only 220cal. if you're interested, you can find the recipe here:

the pumpkin soup was the same story in regard to the serves. I ended up dividing it into 5 serves, which were again still huge, and came in at 290cal each. i really wasn't sure about this recipe either.. i originally decided to make soup because i felt like pumpkin soup, but this is not at all like the pumpkin soup i was thinking of. pumpkin soup as i know it is that lovely, creamy, orange soup, whereas this is much more of a spiced variety. again, it ended up being nicer than i was prepared for (i have low expectations on the first try of pretty much any recipe). if i make it again i'll probably change a few little things - it has wholegrain mustard and honey in it, which make it quite sweet, so i'd probably use less. if you'd like to give it a whirl, the recipe is here:

as i said, the kumara soup was already a proven winner - packed with beautiful, rich veggie flavours, BRIGHT orange, and the biggest serves of all - just shy of 600ml and 320calories! this one is probably my favourite. if you like big strong veggie flavour, message me and i'll stick the recipe on here. i've been cooking for many hours, so really cant be bothered doing it now!

so now i'm sitting down, feet up, quite pleased with myself, enjoying a big glass of blood orange fizzy and a weight watchers chocolate icecream (which, incidentally, tastes pretty great). life's good.
