I bought it already boiled and smashed
so I cooked it up in a pan with red bell pepper, jalapeno and lime juice after about 6 mins then I put it in a tortilla as a quesadilla

It's a root veggie (also goes by the name yuca-I ususally find it by this name). Very tasty. You can peel of the bark and boil or roast it kinda like a potato. Also, there are 'chips' made from them (that some grocery stores carry).

hmmm.... this is intriguing... where did you find the pre-mashed canned kind? I think I've seen the fresh kind, looks like a giant... well... weird looking potato-type thing?

I've never even seen the pre-mashed stuff (maybe at Whole Foods)...wish I could find it. It does look kinda like a potato but longer, dark brown, and usually waxy.

I LOVE cassava!! Where did you find it pre-mashed? I always cook it fresh. I peel it & boil it. When it is soft I then drain it, coat it with olive oil (not a lot depending on how much you cook), a splash of vinegar, a small sliced onion, salt/pepper to taste, 2 cloves of fresh garlic (chopped or mashed).
